Abstract: Natural honeyis a sugary product provided by the bee Apismellifera L., APIDAE. The productis anaqueous solution composed basically of the simple sugars of glucose and fructose, water and a complex mixture of other carbohydrates, enzymes, proteins, amino acids, organic acids, minerals, vitamins, aromatic substances, pigments and pollen grains, even containing bees wax coming from the extraction process. The main form of falsification of honeyis the addition of commercial sugar, starch, glucose and dextrins. The objective of this work wast of evaluate possible alterations in samples of artisanal and industrialized honeys sold in the public markets of Recife-PE. The reaction of Lugol, Fiehe and Lund was carried out in thirteen honey samples from six public markets in 2017. Eleven samples presented positive results for the Lugol and Lund reactions, twelve samples presented positive results for the reactions of Fiehe. Thus, it was concluded that there were adulterations in the compositions of the honeys, demonstrating then need for a greater supervision of the competent organs.
